For the Porridge

  • Rolled Oats: For a gluten-free version, make sure that the package of rolled oats is labeled gluten-free. Alternatively, you can also use other cereals such as spelt, wheat, wholemeal, millet or quinoa.
  • Carrots: If you want to modify the recipe, you can also use other grated vegetables or fruit such as pumpkin, zucchini or apple.
  • Dairy-free milk: you can use any type you like, such as almond, oat, soy, rice, cashew or coconut milk.
  • Agave syrup: you can also use maple syrup, date syrup or sugar instead, depending on your taste and preference.
  • Spices: cinnamon, vanilla, ginger, nutmeg and a pinch of salt are needed for the classic carrot cake flavor.

How to make Carrot Cake Oatmeal

Step 1: Cook the porridge.

First peel and finely grate the carrots. Next, bring the plant milk to the boil in a pan. Stir in the rolled oats and grated carrots and simmer over a low heat for about 2-3 minutes until the mixture has thickened.

Step 2: Season the porridge and leave to swell.

Then stir in the agave syrup, cinnamon, vanilla, ginger, nutmeg and a pinch of salt. Cover the pan with a lid, remove from the heat and leave to soak for 3-5 minutes.

1. Microwave:

  • Mix all the ingredients for the Carrot Cake Porridge in a microwave-safe bowl.
  • Heat the mixture in the microwave in 30 second intervals until the oats are soft.
  • Make sure to stir the mixture in between so that everything is heated evenly.

2. Oven:

  • Fill the mixture into an ovenproof dish and bake until the surface is golden brown and slightly crispy.

  • 1 carrot finely grated
  • 1 ¼ cup plant milk e.g. soy, oat or almond milk
  • ½ cup quick cooking oats
  • 1 tbsp agave or maple syrup or other syrup to taste
  • 1 tsp cinnamon
  • ½ tsp vanilla extract
  • ¼ tsp ginger ground
  • 1 pinch of nutmeg
  • 1 pinch of salt

Toppings (as desired)

  • 2 tbsp chopped nuts e.g. hazelnuts, almonds, walnuts, pecans or shredded coconut
  • 1-2 tbsp raisins or other dried fruit

Instructions

  • Finely grate the carrot using the finest side of a vegetable grater.

  • Bring the plant milk to the boil in a pot.

  • Stir in the oats and grated carrot and reduce the heat to medium. Cook for approx. 2-3 minutes, stirring often, until the mixture has thickened. Then stir in the agave syrup, cinnamon, vanilla, ginger, nutmeg and a pinch of salt. Cover the pot with a lid, remove from the heat and leave to soak for 3-5 minutes.

  • Serve the oatmeal in a bowl and garnish with fresh fruit, nuts, raisins, vegan marzipan carrots or other toppings as desired and enjoy!
