For the Dough:
- All-purpose flour
- Granulated sugar
- Salt
- Butter, cold and cut into small pieces
- Ice water
For the Filling:
- Fresh peaches, sliced
- Granulated sugar

- Milk or cream (for brushing the crust)

How to Make a Artisan Peach Tart
Crust:
- In a high-powered blender or food processor, blend together the dry ingredients: flour, salt, and cold butter cubes until the cubes are broken up.
- Transfer the flour mixture to a large mixing bowl and add ⅓ cup of ice-cold water. Stir gently, adding more water if needed, until the dough forms a moist but not too sticky ball.
- Remove the dough and wrap it in plastic wrap, shaping it into a round flat disk. Chill in the fridge for at least 45 minutes.
Assembly:
- Preheat your oven to 425 degrees F and line a baking sheet with parchment paper.
- Roll out the chilled dough on a floured work surface or waxed paper into a circle 14–16″ in diameter, dusting with flour to prevent sticking.
- Carefully transfer the rolled-out dough onto the lined baking sheet.
Filling:
- In a large bowl, combine sliced peaches, sugar, lime juice, cornstarch, and salt until the cornstarch is completely dissolved.
- Place the peach mixture in the center of the crust, leaving a 2″ border. Fold the crust over the filling and brush the entire crust with an egg wash.
- Dot the top of the filling with butter cubes and dust with sugar for a glaze.
Baking:
- Bake for 20 minutes, then rotate the pan and bake an additional 20–25 minutes, or until the crust is golden brown and the center is hot and bubbly.
Finishing Touch:
- For an extra sweet glaze, add any remaining butter to the top of the tart and sprinkle a little bit with more sugar. Allow it to melt as the tart cools.
- The best way is to serve with a sprinkle of powdered sugar and a side of vanilla ice cream. Enjoy peach season
