This corned beef pockets recipe will satisfy your corned beef craving and you’ll fall in love with this fun kid-friendly meat pocket recipe. I love an easy meal that is a take on a classic and is made even better by the fact that it is a 4-ingredient recipe!

A friend of mine was telling me that her mom used to make these super simple ham and cheese pockets. She would take crescent rolls and pop them out of the roll, lay some deli sliced ham down, a slice of cheese and top it with another crescent roll and pinch the edges. Throw it in the oven and bake for a bit. Viola, a great snack, kid friendly meal, easy dinner or appetizer.

Well, I thought those sounded super delicious but I was looking for a new recipe for St. Patrick’s Day this year (a kids St. Patrick’s Day recipe if you will). So, I got a little creative and made these corned beef pockets.

What ingredients do I need for corned beef pockets?

  1. Crescent rolls yup, simple ones like these.
  2. Corned beef
  3. Swiss cheese
  4. Thousand island dressing

This fun meat pocket recipe remind me of a yummy empanada (like these air fryer cuban empanadas). They are pockets full of goodness – at least that’s how I like to describe them! Another term I’ve heard used for these are ‘Reuben rolls.’ By the way, there is a restaurant in Milwaukee called Mader’s that makes THE BEST reuben rolls!

If you want to make these pockets a bit more kid-friendly, you could always swap the cheese or play around with the fillings to see what you kids like! Not all kids love Swiss cheese, so maybe try turkey and cheddar – have some fun!

When you find a combo that works for your kids, keep it on hand because these make an excellent after school snack and are just as easy to make as it sounds. This corned beef pocket recipe is also a great St. Patrick’s day appetizer!

Ingredients

  • 1 package crescent rolls
  • 4 slices corned beef deli-sliced
  • 2 pieces Swiss cheese
  • 1/4 cup thousand island

Instructions

  • Preheat oven to 375.

  • Line a baking sheet with parchment paper or a silicone baking mat.

  • Open crescent roll package and lay 4 triangles out flat onto a baking sheet.

  • Rip pieces of corned beef to fit onto flat-laid crescent roll. Add torn pieces of cheese on top. Continue for each flat-laid crescent roll.

  • Take remaining 4 crescent roll triangles and lay on top of corned beef and Swiss. Pinch edges to form a pocket. Make sure the edges are sealed so filling doesn't leak out.

  • Bake at 375 for 12 minutes.

  • Use thousand island as a dipping sauce!
