I had three goals when I set out to create this chicken curry soup: To create a dish full of healing compounds, to create a savory rhubarb recipe, and to create something absolutely delicious and different from what I had been eating.

My technique for GAPS soups makes them incredibly healing, but I wanted this soup to have an extra boost. I wanted the healing compounds of coconut oil, turmeric, coriander, and cumin that I have been reading about. These brain- and metabolism-boosting, anti-inflammatory, and hormone-supporting foods needed a place in my diet, and combining them all in a soup is a great way to do so! Throw in more than a gallon of vegetables, and you have something that is going to be good to your body.

My mother-in-law grows a lot of rhubarb. And I mean a LOT. I couldn’t sit by and watch her bake all of it into sugar-heavy pies, bars, and syrups. Plus, I figured that with SO MUCH free vegetable (Yes, rhubarb is a vegetable, not a fruit. I don’t care what the FDA says – just look it at! Botanically, that is a vegetable.), I should take advantage of its availability. There are basically no savory rhubarb recipes available on the internet, but I managed to scrape up a couple ideas. And it turns out, it makes an awesome soup!

Thankfully, I didn’t need to do any more work to make this chicken curry soup delicious. It is full of comforting and delicious flavors. Nothing needs to be added to this soup before serving, expect maybe a little salt. Just make and enjoy! My husband, a spice snob, loves it. My mom couldn’t stop telling me what a good job I did. Even my brother and a friend, who do not follow real food diets, enjoyed this incredibly healing soup!

Healing Chicken Curry Soup

This savory rhubarb recipe is seasoned with nightshade-free Indian spices. It includes some seed-based spices, but if you tolerate these it is okay for AIP. It is safe for Stage 5 of GAPS Intro or Full GAPS, depending on how you tolerate coconut oil. If you tolerate legumes, it would also be great with properly prepared lentils added in.

If you are worried that you don’t like rhubarb, have no fear! This preparation causes the rhubarb to disappear completely into the soup, and the spices complement the flavor well. I have never liked rhubarb sweets, but I can’t get enough of this soup!

Serve as it is for a hearty, nutrient dense meal. Add coconut oil or egg yolk to your bowl of soup for even more healing foods.

This chicken curry soup is packed full of healing ingredients and nutrient dense foods. It also a delicious savory rhubarb recipe for those who are sick of rhubarb bars!

Ingredients

  • 1 whole chicken (or 2-3 pounds of bone-in chicken)
  • Coconut oil
  • 1 medium onion, chopped
  • 4 cups chopped rhubarb
  • 4 cloves garlic, minced
  • 1-2 inches ginger, grated
  • 1 tbsp each coriander, garam masala, cumin, turmeric, brown mustard seed
  • 12 cups vegetables, chopped (I usually use leafy greens, peas, and carrots for this soup)

Instructions

  1. Place one whole chicken, rinse, and giblets into a large soup pot. Cover with filtered water.
  2. Bring water just to a boil, then reduce to a simmer. Cook for 1 hour.
  3. While the chicken is cooking, chop and prepare all the ingredients.
  4. 10 minutes before the chicken is done, heat a large cast iron pan over medium heat.
  5. Add coconut oil to generously coat the bottom of the skillet.
  6. Add onion and rhubarb to the pan. Saute for about 10 minutes, until the onions are soft and the rhubarb has been reduced to a thick paste.
  7. Add garlic, ginger, and spices. Stir in and satue for about a minute. It will look like this:

  9. When the chicken is done cooking, remove from the pot and place on a plate. Leave the broth in the soup pot.
  10. Add rhubarb mixture and vegetables into the soup pot. Simmer for 30 minutes, until vegetables are well cooked.
  11. While the vegetables are cooking, dismantle the chicken. Reserve the bones for broth and shred the chicken. Add the skin, connective tissue, and organs to a blender with a little pit of broth and puree until smooth.
  12. Add chicken and soft tissue puree back into the soup. Stir to combine everything.
  13. Enjoy!
