Directions

1.To make the baked Tuscan chicken Casserole: Preheat your oven to 400ºF (200ºC).

2. In a bowl, beat together the spinach, cream cheese, and heavy cream. Add half the garlic, salt, onion powder, chili powder, black pepper, and Italian seasoning and beat to combine. Add parmesan cheese and 1/2 of the mozzarella cheese and continue beating to combine.

3. Lay the chicken breasts flat in the bottom of a large baking dish. Season the chicken breasts with salt, pepper and the remaining half of the garlic. Spread the spinach and cream cheese mixture on top of the chicken, top with sun-dried tomatoes then drizzle a tablespoon of oil reserved from the sun-dried tomatoes. Finish by topping the chicken casserole with mozzarella cheese.

4. Bake the Tuscan chicken casserole for 35 minutes: Cook for 20 minutes loosely covered with foil then uncover and bake 15 minutes or until the chicken is cooked through (165˚F – 71ºC internal temperature). Serve the BakedTuscan chicken casserole immediately with your choice of sides (cauliflower rice, zucchini noodles…) – Enjoy!

  • Use your chicken leftovers: You can use your leftover chicken to make this Tuscan chicken casserole. Just bake in the oven for 15 or 20 minutes, depending on the amount of chicken used.

    This recipe is amazing!!! Made as written except used 1/2 the sun-dried tomatoes. Restaurant quality with very little work. Some have said chicken was chewy. Mine wasn’t. I always use fresh chicken breasts (Miller’s all natural) a local farm. We live in northeast IN.

    Made this for dinner tonight and my husband loved it. Instead of using frozen spinach, I bought a bag of fresh spinach, sauteed it in butter and after cooling a bit, added it to the cream cheese mixture. I served the chicken over coucous. It was delicious!

    I normally don't like to write a review when I've altered the recipe, however I thought this might be helpful to others who are interested in 1) PREPARING IN ADVANCE and 2) prefer CHICKEN TENDERS. I prepared this for company and made it the night before. It came out heavenly! I used chicken tenders which came out great. I followed the advice of others and doubled the sauce recipe except for the sundried tomatoes. We devoured it. I will definitely make this again.

    The flavors! ❤️I put some of the cream sauce on the bottom of the dish so the chicken wouldn’t dry out. Dropped the temp to 375. I was so afraid the chicken would dry out but we did well!Used fresh spinach so there was a bit more water. My sun dried tomatoes were already julienned so it all went well! I did make some spinach linguini to sop up the juices. Excellent recipe!

    Excellent recipe and very flavorful. I used fresh spinach [about 5-6 oz] chopped up, which got further shredded by using a hand mixer to mix cheese/spice mixture. I also cut the dried tomatoes in half, but otherwise followed the recipe exactly. The chicken was not too dry for my taste, but maybe brushing a little olive oil on bottom of pan would keep it more moist for those that did. A keeper for my family!

    My wife used roasted and peeled red peppers in place of the sun dried tomatoes (Not Fans) and the recipe was delicious. (Next time we will cut the cooking time by 10 minutes as ours came out very over cooked with the chicken being dry. And we used whole breasts not sliced because they were so big they would not have fit in the dish if sliced.Overall very delicious, it just needs some tweaking to the baking time.

    Delicious! I had diced chicken breast pieces. I stir fried them for a couple minutes in a little butter. I used extra light cream cheese, a little milk (no cream), fresh spinach ( just shredded, not pre cooked. I omitted italian spices. Only had light mature cheddar cheese. Half the sun dried tomatoes mixed with a couple of fresh tomatoes. Moist succulent chicken, delicious tangy creamy sauce. Served with baby potatoes. Will definitely make again. I love recipes that still work even with substituted ingredients.

    Great recipe, and reheats well in the microwave. Because I had a number of people showing up for dinner, I used two pounds of chicken breast (two very large chicken breasts), which I sliced horizontally into four slices. I didn't have enough ingredients to double the cheese mixture, so I began with 1 cup of marinara sauce in each of two 8 X 8 inch glass baking dishes. Then the chicken slices -- one pound each. I used 3 ounces of fresh spinach in each dish, and one-half of the cheese mixture in each dish. Used one jar of sun-dried tomatoes split between the two dishes. I doubled the mozzarella but split it between the two dishes. Baked per the recipe. It was great. I hope to make the recipe true-to-form soon, but the way I made it was still scrumptious.

    The recipe sounds so wonderful I'm making it tomorrow for my daughter's 45th birthday party. I will be tripling the recipe. My question is: can I make the topping mixture ahead of time and refrigerate it overnight? Also - can you heat the cheese spinach mixture before adding it to the chicken?     Easy & delicious! I did use fresh spinach (quick sautee before adding) and doubled "the sauce" as some reviews noted. 1.5x would probably have been enough, but I didn't really have time (or desire) to do the math for that so I just doubled and threw the extra spoonful or two away. It definitely would have been perfect for one more chicken breast, but I had already committed to the pan and didn't have room. Also, the "sauce" isn't really sauce as much as it is the grease & oil that melts out of all the cheese and cream. Most of the "sauce mixture- even when doubled" stays on top of the chicken and doesn't really melt [into a sauce]. Delicious though. And I'm excited for the left overs tonight as many folks comment that it's even better as leftovers.

    It was good but quite rich. I’ll make it again but will half the amount of sun dried tomatoes. Also…just a tip…whenever a recipe calls for frozen spinach, thawed and the excess water squeezed out…don’t do it. Instead buy fresh spinach and sauté in a little olive oil on the stovetop. You can add as little or as much as spinach to the dish as you like. The flavor of the spinach done this way is much less potent than the taste of the frozen and frankly this method is just way, way easier! Enjoy!!!

    Your yummy photos drew me in, so wanted to make asap, until I got to the spinach. Not a fan, but when I read it’s mixed with the cream cheese, I decided to make it. I am so glad I did! I couldn’t tell there was spinach and actually, the green color made it look very appetizing. I loved this casserole so much I’m making it again next week. I did change one thing, I cut the huge tomatoes in half. Served with angel hair pasta. Thank you for your recipe and teaching me that I can eat and like spinach.

    I made this for dinner this evening, and it was delicious. I increased all ingredients, plus added approximately 1/2 cup of chicken broth, as I also added fresh uncooked tortellini which required a little extra liquid for the pasta to cook properly. The chicken was very moist and the casserole was very flavourful. Will prepare again.
